Let’s cook ~ Folded Spicy Omelette with Chicken and Vegetable Inside

The idea of making omelette with veggies was my Mama’s. Her omelette with cucumber had always been loved by her children and grandchildren.  My girls were always happy everytime they got this meal on the dining table.  #we really miss mama’s/oma’s cookeries#

 

Ingredients:

* 5 eggs (or as many as you wanted), shaken off (kocok lepas), add a little salt and white pepper

* 150 gr chicken boneless breast, cut small square

* 1 piece cucumber, sliced

* half piece carrot, cut small square

* 100 gr lettuce, sliced long thin

* spring onion, sliced

* 3 pieces red chilli, sliced

* onion, chopped

* salt

* white pepper

* 4 table spoons cooking oil

Cooking steps:

* sauté onion and red chilli in 2 tablespoons of cooking oil, stir until it smells good

* add chicken, stir until the chicken meat turns to white

* add carrot, cucumber, and lettuce,  stir 3 minutes

* add salt, white pepper

* add spring onion, stir a while, then set aside

 

* to make the omelette, please use a non-stick pan, cook with small fire

* put 1 tablespoon of cooking oil onto the pan, make the omelette

* add the stirfried vegetables onto the half part of the omelette

* fold the plain part of the omelette to cover the part with vegetables

* turn the omelette upside down slowly

* served with chilli sauce would be tastier

My little note:

If you haven’t been successful making the folded omelette, do not worry, you can enjoy the scrambled vegetable chicken egg. It tastes same good 🙂 ❤

Let’s cook ~ Red Bean with Beef Soup

Recalling this Korean proverb:  Beans come out from where beans are planted, and padd (red beans) come out from where red beans are planted

Meaning: “Children observe daily and — in their behaviour — often follow the example of their parents.”

And here is my today’s soup: Red Bean with Beef Soup

 

Ingredients:

*  200 gr beef (I chose shank meat), cut square 2 cm (approx), boiled to tender

* 250 gr red bean

* 1 piece carrot, cut stick 2 cm (approx)  

* 200 gr string bean, cut stick 2 cm (approx)  

* spring onion, sliced

* celery, sliced

* onion, chopped

* garlic, chopped

* nutmeg (pala), grated to powder

* half piece tomato, cut

* salt

* white pepper

* 2 table spoons cooking oil

* 1500 ml water

Cooking steps:

* sauté garlic and onion in 2 tablespoons of cooking oil, stir until it smells good

* add boiled beef, stir until the meat turns to paler

* add carrot, and string bean, stir 2 minutes

* add salt and white pepper

* add water, cook until its boiling point

* add spring onion, celery and tomato

* the last, add nutmeg powder, stir a while

* served while the soup is still hot/warm
