Let’s cook ~ Chinese Yellow Tofu, String Beans and Scrambled Egg stirfried with Dried Shrimp

Another simple dish… I had an appointment with a friend, but I should cook for my papa’s lunch first, so here it is…

 

Ingredients:

* 2 pcs Chinese yellow tofu, sliced half lengthwise

* 50 gr dried shrimp (ebi), put into water to soften

* 150 gr string bean, cut 2 cm

* 2 eggs

* spring onion, sliced

* celery, sliced

* onion, chopped

* garlic, chopped

* 1,5 cm ginger, sliced

* 6 pcs red chilli, sliced sloping

* salt

* white pepper

* soy sauce (kecap manis)

* 2 table spoons cooking oil

Cooking steps:

* make scramble egg, set aside

* sauté garlic, onion, red chilli and ginger  in 2 tablespoons of cooking oil, stir until it smells good

* add dried shrimp, stir 1 minute

* add string bean, stir 2 minutes

* add Chinese yellow tofu

* add salt, white pepper, and soy sauce

* add the scrambled egg, stir until everything is well-mixed

* add spring onion and celery

Let’s cook ~ Broccoli Chicken in Oyster Sauce

A simple dish for our yesterday’s dinner… simple but tasty and healthy

 

Ingredients:

* broccoli

* half piece carrot, sliced as matchsticks

* 150 gr chicken boneless breast, diced cut

* spring onion, sliced

* onion, chopped

* garlic, chopped

* salt

* white pepper

* 1,5 cm ginger, sliced

* oyster sauce

* soy sauce(kecap manis), if like

* 2 table spoons olive oil

 

Cooking steps:

* sauté garlic, onion, and ginger in 2 tablespoons of olive oil, stir until it smells good

* add chicken, stir until the chicken meat turns to white

* add carrot and broccoli, stir 3 minutes

* add salt, white pepper, oyster sauce, and soy sauce

* add spring onion

* I put a little fried garlic sprinkle as topping

Yesterday we, Chinese, celebrated Dongzhi Festival.  Throw back my childhood until my children’s childhood years, we used to help my mama shaping the balls a night before the celebration day. The next morning we woke up smelling the aroma of warm gingered sweet syrup with tangyuan balls in a large bowl. The aroma of tradition, the sweet togetherness.

 As traditional philosophy, The Tangyuan’s Day is meant as a time for family to get together. The activities of making and eating tangyuan will involve the family members in a togetherness.

 Tangyuan are made of glutinous rice flour in bright colours. The balls are cooked in gingered sweet gravy.  The glutinous rice flour in bright colour represents the close and profound family ties in bright and positive ambiences. While the ginger and sweet flavours are symbolizing the warmth and sweetness in family relationship. And the round shape of the balls means as harmony and solidarity in family.

Enjoy the tradition, enjoy the togetherness, enjoy the harmony, have a happy Tangyuan’s moment!

Let’s cook ~ Chicken Timlo Soup

This dish is a more spiced soup, with lemongrass, bay leaves and lime leaves, its deliciousness is guaranteed.. 🙂

 

Ingredients:

* 200 gram boneless chicken breast, boiled then shredded

* 1 piece carrot, sliced thin

* 200 gr vermicelli, put into normal water to soften

*100 gr bunga sedap malam (preserved vegetable), put into water to soften

* 50 gr black fungus (black ear fungus), put into water to soften, then sliced thin

* onion, chopped

* garlic, chopped

* spring onion, sliced

* 1,5 cm ginger, sliced thin

* 2 cm lemongrass, sliced thin

* 5 pcs bay leave

* 5 pcs lime leave

* salt

* white pepper

* 2 table spoons sesame oil

* 1500 ml water

Cooking steps:

* sauté garlic, onion, ginger and lemongrass  in 2 tablespoons of sesame oil, stir until it smells good

* add carrot, stir 2 minutes

* add water, cook until its boiling point

* add salt and white pepper

* add shredded chicken, bunga sedap malam, and black fungus

* add bay leaves, and lime leaves, stir until everything is well-mixed

* the last, add vermicelli and spring onion,  stir a while

* served while the soup is still hot/warm

Let’s cook ~ Cocciolini Vegetable Beef Soup

I’m not too often cooking beef, as my family is not the fan of red meat. Only once a while I cooked something with beef as one of the ingredients.

Here is my today’s soup: Cocciolini Vegetable Beef Soup

 

Ingredients:

*  200 gr beef (I chose shank meat), cut square 2 cm (approx), boiled to tender

*  200 gr Cocciolini Pasta, boiled with half tablespoon salt in boiling water

* 1 piece carrot, sliced thin 

* 100 gr string bean, cut stick 2 cm (approx) 

* 100 gr baby corn, sliced thin

* cauliflower

* spring onion, sliced

* celery, sliced

* onion, chopped

* garlic, chopped

* nutmeg (pala), grated to powder

* half piece tomato, cut

* salt

* white pepper

* 2 table spoons cooking oil (olive oil is better)

* 1500 ml water

Cooking steps:

* sauté garlic and onion in 2 tablespoons of cooking oil, stir until it smells good

* add boiled beef, stir until the meat turns to paler

* add carrot, cauliflower, baby corn,  and string bean, stir 2 minutes

* add salt and white pepper

* add water, cook until its boiling point     

* add boiled Cocciolini, stir a while

* add spring onion, celery and tomato

* the last, add nutmeg powder, stir until everything is well-mixed

* served while the soup is still hot/warm

Let’s Cook ~ Spicy Fried Potato and Chicken in Oyster Sauce with Lemongrass Flavor

I love spices that give aroma to the food. Lemongrass is one of the spices with such an irresistible smell. I add lime leaves and lemongrass into this dish, and it is, indeed, tasty and irrestible.

 

 Ingredients:

* 3 pieces big potato, cut square, fried well

* 150 gram chicken fillet, cut small square

* onion, chopped

* garlic, chopped

* 5 pcs red chilli, sliced sloping

* 5 pcs lime leaves, sliced thin

* 3 cm lemongrass, sliced thin

* salt

* white pepper

* oyster sauce

* soy sauce (kecap manis)

* cooking oil

 

Cooking steps:

* sauté garlic, onion, and red chilli in 2 tablespoons of cooking oil, stir until it smells good

* add chicken, stir until the chicken meat turns to white

* add fried potato, stir 3 minutes

* add salt, white pepper, oyster sauce, and soy sauce,  stir until everything is well mixed

* the last, sprinkle the lime leaves and lemongrass onto the dish, stir a while until the aroma of lime leaves and lemongrass is smelled

Let’s cook ~ Tofu Chives Chicken Omelette

This one is nice for breakfast, served with chilli sauce (sambal botol) would be so yumm…

 

Ingredients:

* 5 eggs (or as many as you wanted), shaken off (kocok lepas)

* 150 gr chicken boneless breast, cut small square

* half piece carrot, cut small square

* 50 gr chives (kucai), cut 1 inch (approx)

* 3 pieces red chilli, sliced

* onion, chopped

* salt

* white pepper

* 4 table spoons cooking oil

 

Cooking steps:

* sauté onion and red chilli in 2 tablespoons of cooking oil, stir until it smells good

* add chicken, stir until the chicken meat turns to white

* add carrot, then chives, stir 2 minutes

* add salt, white pepper, stir until everythingis  well-mixed

* add more 2 tablespoons of cooking oil to make the omelette

* pour the shaken eggs onto the mixture, make omelette

* served with chilli sauce would be tastier

Let’s cook ~ Fish Cake and White Tofu Stir-fried with Garlic Salt and Bay Leaves flavor

Single portion of stir-fried meal for my lunch, with no rice…it makes me feeling good  

 

Ingredients:

* 1 piece of white tofu, diced cut

* 3-4 pieces small fish cake (ready made), sliced thick

* onion, chopped

* garlic salt granules (ready made)

* 2 pieces red chilli, sliced

* 2 pcs bay leaves, sliced thin

* white pepper

* 2 tablespoons olive oil

Cooking steps:

* sauté onion in 2 tablespoons of olive oil, stir until it smells good

* add red chilli

* add fish cake cutlets, stir a while

* add tofu, stir 3 minutes

* add bay leaves, then white pepper

* add garlic salt, stir until everything is well mixed

* put on a plate, enjoy it… 🙂

We love smoked beef, we love tofu, we love tofu skin, being cooked in Oyster Sauce with lime leaves flavor,then  we call it ‘flavorsome’.

 Ingredients:

* 5 sheets smoked beef, sliced half lengthwise

* ½  pack Tofu Skin, cut as you like and boiled to soften

* 1 pc Chinese white, cut rectangle or square, fried, set aside

* 2 eggs, make scrambled egg, set aside

* spring onion, sliced

* onion, chopped

* garlic, chopped

* 3 pcs red chilli, sliced sloping

* 5 pcs lime leaves, sliced

* salt

* white pepper

* oyster sauce

* soy sauce (kecap manis)

* 2 table spoons cooking oil

Again, I remember my childhood years, Mama always cooked this soup when one or two of us were having sore throat. The green squash is good to relieve the inflammation, she said so. Ahh, how I dearly miss my mama.

 

Ingredients:

* 300 gr chicken boneless breast, cut square 2 cm (approx)

* 1 pc medium size green squash, peeled off, sliced

* 1 piece carrot, cut as sticks 2 cm (approx)

* spring onion, sliced

* celery, sliced

* onion, chopped

* garlic, chopped

* ginger, sliced

* half piece tomato, cut

* salt

* white pepper

* 2 table spoons cooking oil

* 1500 ml water
