Let’s cook ~ Savory Spiced Baby Chayote and Yellow Tofu

Once in a while we may enjoy the savory of dish cooked in coconut milk and spices (slices of lemongrass and some pieces of bay leave), as a variation in our homecooked menu.

 

Ingredients:

* 5 pieces baby chayote, sliced as matchsticks

* 1 piece carrot, sliced as matchsticks

* 1 piece Chinese yellow tofu, sliced thin long

* some small pieces chicken breast with bone

* 5 pieces red chilli, sliced

* lemongrass, sliced

* spring onion, sliced

* celery, sliced

* 5 pcs bay leave

* onion, chopped

* garlic, chopped

* half piece tomato, cut

* salt

* white pepper

* 2 table spoons cooking oil

* 500 ml coconut milk, from a half coconut

* 1000 ml water

Cooking steps:

* sauté garlic and onion in 2 tablespoons of cooking oil, stir until it smells good

* add red chilli, lemongrass, salt and white pepper

* add chicken, stir until the chicken meat turns to white

* add baby chayote and carrot, stir 2 minutes

* add water, cook until its boiling point

* add coconut milk, stir slowly

* add Chinese yellow tofu, keep stirring

* add bay leaves

* the last, add spring onion, celery, tomato

* served while this dish is still hot/warm

Let’s cook ~ Chicken Tofu Potato Stew

The flavour of Cinnamon I added into this dish was really giving more to its lusciousness.

 

Ingredients:

* 1 boneless chicken breast, cut square 2 cm

* 1 piece potato (chose a big one)

* 1 piece white tofu

* half piece tomato, cut

* spring onion, sliced

* celery, sliced

* onion, chopped

* garlic, chopped

* salt

* white pepper

* cinnamon powder

* soy ketchup (kecap manis)

* salted ketchup (kecap asin)

* cooking oil for frying chicken, potato and tofu, and for saute

* 1000 ml water

Cooking steps:

* separately fry chicken, potato and tofu, then set aside

* sauté garlic, and onion in 2 tablespoons of cooking oil, stir until it smells good

* add fried chicken, potato and tofu, stir 2 minutes

* add soy ketchup, salted ketchup, and salt

* add water, cook until its boiling point

* add tomato, spring onion, and celery

* the last, add white pepper and cinnamon powder

* served while it is still hot/warm

Let’s cook ~ Fried Fishballs Vegetables Soup

I cooked this soup for my papa’s dinner, just a small portion. He loves soup, as to make swallowing meal easier, he said so.

 

Ingredients:

* 12 pcs fried fishball

* half piece carrot, diced cut

* cauliflower

* half piece tomato, cut

* spring onion, sliced

* celery, sliced

* onion, chopped

* garlic, chopped

* salt

* white pepper

* 2 tablespoons cooking oil

* 1000 ml water

* sauté garlic, and onion in 2 tablespoons of cooking oil, stir until it smells good

* add fried fishballs, stir 1 minute

* add carrot,and cauliflower, stir 2 minutes

* add salt and white pepper

* add water, cook until its boiling point

* the last, add tomato, spring onion, and celery

* served while the soup is still hot/warm

Let’s cook ~ Chinese Okra Chicken Balls Vermicelli Soup

This is one of my childhood’s favourite soups. The Chinese Okra is soft and soothing, good to relieve the throat sore.

 

Ingredients:

* 8-10 pcs chicken balls

* 5 pcs Chinese okra

* 1 piece Chinese yellow tofu,cut thin long (approx. 2 cm)

* 1 piece carrot, sliced thin

* 200 gr vermicelli, put into normal water to soften

* half piece tomato, sliced to 4 slices

* spring onion, sliced

* celery, sliced

* onion, chopped

* garlic, chopped

* 1,5 cm ginger, sliced

* salt

* white pepper

* 2 tablespoons sesame oil

* 1500 ml water

Cooking steps:

* sauté garlic, onion  and ginger in 2 tablespoons of sesame oil, stir until it smells good

* add chicken balls, stir 1 minute

* add water, cook until its boiling point

* add carrot, and Chinese okra,  stir 2 minutes

* add salt and white pepper

* add Chinese yellow tofu, stir 2 minutes

* the last, add vermicelli, tomato, spring onion and celery, stir a while

* served while the soup is still hot/warm

Let’s cook ~ Folded Spicy Omelette with Chicken and Vegetable Inside

The idea of making omelette with veggies was my Mama’s. Her omelette with cucumber had always been loved by her children and grandchildren.  My girls were always happy everytime they got this meal on the dining table.  #we really miss mama’s/oma’s cookeries#

 

Ingredients:

* 5 eggs (or as many as you wanted), shaken off (kocok lepas), add a little salt and white pepper

* 150 gr chicken boneless breast, cut small square

* 1 piece cucumber, sliced

* half piece carrot, cut small square

* 100 gr lettuce, sliced long thin

* spring onion, sliced

* 3 pieces red chilli, sliced

* onion, chopped

* salt

* white pepper

* 4 table spoons cooking oil

Cooking steps:

* sauté onion and red chilli in 2 tablespoons of cooking oil, stir until it smells good

* add chicken, stir until the chicken meat turns to white

* add carrot, cucumber, and lettuce,  stir 3 minutes

* add salt, white pepper

* add spring onion, stir a while, then set aside

 

* to make the omelette, please use a non-stick pan, cook with small fire

* put 1 tablespoon of cooking oil onto the pan, make the omelette

* add the stirfried vegetables onto the half part of the omelette

* fold the plain part of the omelette to cover the part with vegetables

* turn the omelette upside down slowly

* served with chilli sauce would be tastier

If you haven’t been successful making the folded omelette, do not worry, you can enjoy the scrambled vegetable chicken egg. It tastes same good 🙂 ❤

Recalling this Korean proverb:  Beans come out from where beans are planted, and padd (red beans) come out from where red beans are planted

Meaning: “Children observe daily and — in their behaviour — often follow the example of their parents.”

And here is my today’s soup: Red Bean with Beef Soup

 

Ingredients:

*  200 gr beef (I chose shank meat), cut square 2 cm (approx), boiled to tender

* 250 gr red bean

* 1 piece carrot, cut stick 2 cm (approx)  

* 200 gr string bean, cut stick 2 cm (approx)  

* spring onion, sliced

* celery, sliced

* onion, chopped

* garlic, chopped

* nutmeg (pala), grated to powder

* half piece tomato, cut

* salt

* white pepper

* 2 table spoons cooking oil

* 1500 ml water

Cooking steps:

* sauté garlic and onion in 2 tablespoons of cooking oil, stir until it smells good

* add boiled beef, stir until the meat turns to paler

* add carrot, and string bean, stir 2 minutes

* add salt and white pepper

* add water, cook until its boiling point

* add spring onion, celery and tomato

* the last, add nutmeg powder, stir a while

* served while the soup is still hot/warm

Let’s cook ~ Vermicelli Vegetables Spicy Stirfried

Somehow, Vermicelli reminds me of my childhood. It’s probably because my Mama was quite often using this ingredient for our meals. I like vermicelli and I miss my Mama a lot.

 

Ingredients:

* 200 gr vermicelli, put into normal water to soften

* 150 gr chicken boneless breast, diced cut

* 6 pcs fish ball, sliced thin

* 1 bundle mustard greens (caisim/sawi hijau)

* witloof (sawi putih)

* half piece carrot, sliced thin

* broccoli

* 50 gr black fungus (black ear fungus), put into water to soften, then sliced thin

* 2 eggs

* spring onion, sliced

* onion, chopped

* garlic, chopped

* 3 pcs red pepper, sliced thin diagonal

* 5 pcs lime leaves, cut half

* half piece tomato, slice into 4 pcs

* salt

* white pepper

* 2 table spoons cooking oil

Cooking steps:

* make scramble egg, set aside

* sauté garlic and onion in 2 tablespoons of cooking oil, stir until it smells good

* add chicken, and sliced fishball, stir until the chicken meat turns to white

* add carrot and broccoli, stir 2 minutes

* add mustard greens, witloof and red pepper, stir 2 minutes

* add black fungus, vermicelli, and scrambled egg, stir until all mixed

* add salt, white pepper

* add spring onion and tomato

* the last, add lime leaves, stir a while

* 3 bundles of mustard greens (caisim/sawi hijau), cut

* 10 pcs baby corn, sliced thin

* 150 gr chicken boneless breast, diced cut

* spring onion, sliced

* onion, chopped

* garlic, chopped

* salt

* white pepper

* 1,5 cm ginger, sliced

* oyster sauce

* soy sauce, if like  (kecap manis)

* 2 table spoons cooking oil

* 2 eggs

* 5 pcs lime leaves, cut half

* oyster sauce
